About Numturel

Numturel is a reference guide to Indian snacks, street food and chaat. Its purpose is to let a home cook reproduce a dish accurately, and its structure follows from that purpose: recipes sit beside method guides, and every entry carries a note on regional background.

Purpose

The reference exists to supply enough detail for a dish to succeed on a first attempt. This requires exact quantities, a list of the equipment actually used, steps in a fixed order and an explanation of why a method works. A multi-criteria finder supports this aim by letting entries be filtered on diet, time, difficulty, method, main ingredient, region, snack type and heat, so the search can begin from whichever constraint matters most.

Structure of an entry

Each recipe is written to be followed at the stove. Quantities are measured, not approximated, and the method is divided into labelled stages. Where households or regions prepare a dish differently, the entry records the variation and does not present one version as the only valid one.

Method guides accompany the recipes because the same skills recur across unrelated dishes. Batters, chutneys, frying and tempering are documented once, and a cook who understands them can apply that knowledge to many recipes.

Treatment of origins

Regional attribution is handled conservatively. India's snack traditions developed in different cities, states and climates, so a Mumbai stall dish, a Delhi winter-market dish and a Gujarati home dish are treated as separate traditions. Where several regions claim the same dish, as occurs with a number of chaat items, the competing claims are reported side by side. A historical statement that cannot be verified is labelled as a commonly repeated account.

Exclusions

  • Nutritional figures, including calorie counts, are not published because no independent verification exists for them.
  • Health or medical benefits are not attributed to ingredients. Long traditional use of a spice does not establish a clinical effect, and the two are kept apart.
  • Reviews, ratings and testimonials from named cooks or chefs are not included. Attribution appears only where a checkable source exists.
  • Guidance that weakens food safety is excluded, notably unsafe frying-oil reuse and shortcuts in handling meat, dairy or fried food.

Error reporting

Entries are checked before publication, yet errors remain possible, and some culinary history is contested even among those raised with the dish. A suspected mistake or weakly sourced claim can be submitted through the Corrections page, which also describes how reports are handled.
